Black Pepper Chicken & Oat Claypot Rice

Below are yummy pics that Mummy has whipped up for their dinner today.
Her new creation & inspired by the recipe given by Quaker Oats with slight variations. It is yummy signed off by Daddy. It is an healthy alternative yet a simple dish to whip up.

Ingredients you need for 2 px
1) Chicken drumsticks (2 pcs) or chunky cut chicken pcs
2) 1 cup of rice (50% white rice, 50% organic brown rice)
3) Some Beijing cabbages & cut
4) Finely cut carrot
5) Chinese mushrooms, soak & cut finely
6) Ginger - finely cut, Garlic - finely chopped
7) 3-4 tbsp Quater Oats


Step A ~ Marinate the chicken drumsticks
- Use a pinch of salt to rub the chicken
- Add the pounded ginger, 1 tbsp chopped garlic, 1 tbsp seasame oil, 2 tbsp dk soya sauce, 1 tbsp corn flour, 3/4 tbsp of crushed black pepper, chicken & mix well in the marinade.
Set aside for at least 30 min (ours has been set for several hours).

Step B - Prepare the chicken
- Heat oil in the wok,
- add chicken and stir fry till meat is firm
- scoop the chicken and sauce into a plate & steam for another 20 min
(optional for drumstick to ensure meat are fully cooked)

Step C - Prepare the rice
- Heat oil in the wok & add some cut ginger and chopped garlic & stir fry
- Next add cabbages, carrots and mushroom and stir fry together
- Add rice & 1-1/4 cup of water into the mixture
- Add 2 tbsp dk soya sauce, 1/2 seasame oil & few dash of pepper, mix well for abut 5 min
- Add the oats into the mixture for added fibres


Scoop the mixture into the rice cooker as well as the chicken to out on top of the rice mixture. Cook it using the rice cooker or you may like to use claypot to cook the mixture over a low fire.
